Happy New Year, everyone! Gosh, it has been a while, hasn’t it? I know that, to some of you, it appears as if I suddenly “disappeared” out of nowhere. But in reality, I was never fully gone.
I am not one to cook with tofu that much. Even though we buy the organic and non-GMO kind, it is still a processed food so we try to keep it to a bare minimum. However, when I do decide to include some tofu in our diet, it must be absolutely packed with flavor.
In sync with Barbara's renowned love for food and all things vegan, I am finding myself looking more and more towards just buying and eating unprocessed foods.
I am not going to lie, it’s been a tough couple of weeks. My husband and I have been trying to re-adjust back to life—back to our normal routine—but no matter how much we try, we never seem to get back there…

Hello ladies & gentlemen, I guess you know by now that once in a while I get a serious case of wanderlust, and since in reality we are not going any place soon, my way to treat myself is to have a virtual visual holiday.
July is over and we logged just over 300 kilometers (187 miles). I had a lot of setbacks these last two weeks, and a little scare two Sundays ago actually forced me to stop my long run 8 miles short. My husband is doing incredibly well; he can run on the treadmill with a speed of 8.5 miles/hour like no one’s business. My pace has improved a lot as well. I can sustain a pace faster than my marathon pace (7.3 miles/hour) for a pretty decent distance, which makes me feel a lot more confident about reaching my goal this September.
It seems that the older I get, the more I fall in love with a relaxed, less complicated, casual and comfortable style. Soft T-shirts, distressed denim, vintage pieces, boho flats and sandals, and natural hair and makeup are just a few of my new favorite things. (I can’t tell you the last time I wore eye-shadow or eyeliner. I’m more of a lipstick kind-of-girl.)
